Jamaican cocoa is described as being fine flavour cocoa. There are two broad categories of cocoa beans: "fine or flavour" cocoa beans, and "bulk" or "ordinary" cocoa beans. Fine or flavour cocoa beans are produced from Criollo or Trinitario cocoa tree varieties, while bulk cocoa beans come from Forastero trees;. JAMAICAN CHOCOLATE BALLS Jamaian chocolate balls are composed of Jamaican cocoa powder, nutmeg and cinnamon or pimento. They are rolled by hand. They are great for use in cakes.
