Jamaican cocoa is described as being fine flavour cocoa. There are two broad categories of cocoa beans: "fine or flavour" cocoa beans, and "bulk" or "ordinary" cocoa beans. Fine or flavour cocoa beans are produced from Criollo or Trinitario cocoa tree varieties, while bulk cocoa beans come from Forastero trees;. JAMAICAN CHOCOLATE BALLS Jamaian chocolate balls are composed of Jamaican cocoa powder, nutmeg and cinnamon or pimento. They are rolled by hand. They are great for use in cakes. Three Jamaican herbal Teas which are fairly popular are Lime tea, Moringa tea, and Soursop leaf tea. SOURSOP TEA Sousop Annona muricata leaves can be used for tea. The fruit is rich in vitamins B1 and C. The fruit and leaves of Annona muricata. I do not own these images. The tea is prepared by picking leaves, washing, then boiling leaves for a few minutes. Sugar or honey can be used to sweeten tea to taste. Black Tea Black tea does not contain catechins, instead they contain theaflavins and thearubigens.Theaflavins determine the weight and quality of black tea. Black Tea Black tea is withered, rolled, heated partially and then left to ferment until it becomes brown or black, Then it is heated again. Severa asian countries refer to Black tea as Red Tea (the colour is appears when seeped). Western countries refer to Black tea as Black tea because of the colour of the dried, furled leaves. Red Tea in western countries refer to Roiboros or bush tea which is African in origin. |
Oolong Tea Oolong Tea is dried under the sun and oxidised before curling and twisting.It is more oxidised than green tea. During the first stage of withering, oolong tea is sunned (outdoors) and then dried (indoors). The leaves are then rattled in a machine or by hand . They are then rolled and dried, |
Yellow Tea is processed similarly to green tea,but with a slower drying phase. First high temperatures are used on the leaves to prevent oxidisation. Then, the leaves are heaped and humidity and moisture causes the leaves to yellow. A damp cloth may be used to increase moisture content. The length od this process depends on where tea is produced. The tea is then dried by roasting or baking. |
